Collagen Chia Seed Jam

Every time I find myself buying a jar of jam at the grocery store, I think "I should really try making my own," but there I go, throwing it into my cart anyway. I figured that making homemade jam would be super time consuming, but I finally gave it a try and now I'm wishing I hadn't waited so long. The process took way less time than I estimated, with no prep needed and minimal cleanup time, as the recipe only uses one saucepan. The next time I find myself with a carton of berries that are past their prime, I'll be back in the jam factory.

Now that I know that making homemade jam isn't as intimidating as it seems, making my own seems like a no-brainer because it allows me to be in control of all of the ingredients. Chia seeds are small but mighty! They are a great source of omega-3 fatty acids, rich in antioxidants, and provide fiber, iron, and calcium. I’ve been adding them into my meals to help my digestion. I'm always looking for ways to sneak more protein into my diet, so I added a scoop of Vital Proteins Collagen Peptides into this recipe for an extra boost. It dissolves easily and is flavorless and odorless, so it goes completely undetected, while supporting your bone and joint health. I chose to use raspberries in this recipe because they're my personal favorite, but you could easily substitute any other berry.

Raspberry Collagen Peptide Jam

20 minutes, plus cooling time

Ingredients

3 cups frozen or fresh raspberries

3 tablespoons honey

2 tablespoons chia seeds

1 tablespoon vanilla extract

1-2 scoops of Vital Proteins Collagen Peptides (optional)

Instructions

Add the raspberries and honey to a medium saucepan and bring to a simmer over medium to high heat, stirring contents frequently. Reduce heat to medium-low and simmer for approximately 5 more minutes, mashing the berries with a fork.

Stir in the chia seeds until combined and continue to cook over medium-low heat, stirring frequently, for approximately 15 minutes. The mixture will begin to thicken and become more jam-like.

Once the mixture has thickened, remove the pan from the heat and stir in the vanilla. If you'd like to add in the collagen, pour in one scoop at a time, mixing thoroughly until powder dissolves completely.

Keep the jam in a sealed container in the refrigerator for up to two weeks.
